Preparation for Conventional Oven

Pre-heat the oven to 180ºC or 350ºF for 15 minutes.

  • Prepare the oven trays by placing parchment paper on the surface. You can also use aluminum foil and paint the entire surface of the paper with oil.
  • Place the cakes on the tray leaving 2cm of distance between them to give them the space they need to grow and let them defrost for 20 minutes.
  • To give the puff pastry shine you can paint the surface with egg (white and yolk scrambled).
  • After the egg you can add sugar to the preparations of sweet or seeds to taste according to the flavor and according to your preferences. (See Decorate and Serve).

  • DO NOT prepare in microwave oven.
  • To bake baskets with molds and prevent the puff pastry from growing and losing the shape of the mold, it can be filled with some grain (beans, lentils, dried peas).
  • If you are baking sheets to later make millefeuille, before baking them you must prick them with a fork so that the steam comes out and prevent them from growing

  • Put in the oven and wait for the cakes to grow and are golden.
  • Baking times may vary according to the type of oven and the trays used for baking, but can vary between 30 and 40 minutes.
  • We recommend that you do not open the oven during the first 15 minutes of baking, as this is the time when the puff pastry is growing and needs to have concentrated heat.

air fryer

  • Preheat the air fryer for 5 minutes at 160ºC.
  • Add the cakes to the fryer and leave for 15 minutes at 160°C, then raise the temperature to 180°C and leave for 10 minutes or until golden brown.
  • Optional: Sweet cakes can be brushed with water and added sugar for better presentation and flavor.
  • Cooking times may vary according to the power of the fryer.
  • Do not open the fryer during the first 10 minutes of cooking, as this is the time when the puff pastry is growing and needs to have concentrated heat.
