Characteristics of the fillings
- You can make sweet, salty, spicy, sweet and sour fillings, among others. Remember that puff pastry is neutral in flavor and allows you to make fillings of any flavor.
- Avoid making fillings that are too runny, as they can run out of the cakes when baking.
- Always look for the balance between the amount of dough and filling so that when baking it does not come out of the cake or that it is left with very little filling.
Before filling and assembling the cakes, you must remove the excess flour that remains on the dough.

- When preparing the fillings with some type of cooking, we recommend leaving them with a lot of flavor since the puff pastry absorbs part of the filling and we do not want its flavor to be lost.
- The filling must be cold when the cakes are to be filled.
